Easy Chana


My grandma shared this super easy and tasty recipe with me. If using canned chickpeas and tomato sauce, this takes 20-25 minutes to make start to finish. You can also soak chickpeas overnight instead of using canned, and if you know your way around the kitchen, you could probably figure out how to use fresh tomatoes as well.

Lentil Chili


My cousin, Manisha, shared this hearty and flavorful recipe with me (it is originally from this book). I serve it over rice but it would be even better with corn bread! I mistakenly added cinnamon to the pot in addition to cumin powder once but people seemed to like the resulting unexpected flavor.

Green Chickpea Curry with Couscous















I got the this recipe verbatim from Minimalist Baker. If you leave out the couscous and double up on the chickpeas instead, it becomes gluten-free. I served it with chopped onions to add some freshness but there are several options as highlighted in the recipe below. :)

West African Peanut Soup
















This tasty recipe is very filling and so easy that even I can make it :) I learned it from Sunaina, who learned it from her friend Anushka who learned it from the awesome Cookie and Kate blog. The recipe serves 4 large portions or about 6 regular portions in my experience.

Here is the official recipe, but I'll include and highlight my own suggestions for what I think is a heartier and more flavorful version of the soup.

Thai Green Curry



















This is a quick and easy green curry. You can also choose to make red curry instead with the same steps.

The key ingredient is red or green curry paste which comes ready-made in jars. I recommend the Thai Kitchen brand because it is vegan (many have fish sauce) and because it has a simple list of natural ingredients. You should be able to find it at most grocery stores.
